Hickory Grilled Red Fish
Serving Size = 1
Ingredients
3 Tablespoons Softened Butter
Seafood Seasoning
4 Redfish Fillets (8 ounces each)
Method:
Rub each fillet with softened butter and sprinkle generously with seafood seasoning. Place on hot hickory grill for approximately 1 to 1 1/2 minutes per side. After marking fillets, move them to a cooler portion of the grill and cover with aluminum foil. Cook for about 2 additional minutes on each side. Fish is cooked when it begins to flake when touched with a fork and is no longer opaque. Garnish with boiled potatoes and serve with lemon butter sauce.
Lemon Butter Sauce - Small Batch
Serving Size = 4
Ingredients
2 Tablespoons Heavy Cream
3/4 Pound Sweet Butter
1 Lemon -- juiced
Salt And Pepper
Method:
Bring cream to a boil in a sauce pan. Keeping the cream at a boil, incorporate butter in small pieces, two at a time. Whisk vigorously while incorporating the butter. Remove from heat after all of the butter has been incorporated. Season with lemon juice, salt and black pepper to taste. Keep sauce warm before serving.
